The kiridashi style knife is a blade that appears across many cultures and traditions. Variants have been used for wood carving, leather skiving, oyster shucking, bookbinding etc. 

I am most familiar with the kiridashi as a useful carpentry tool, having a single bevel allows for precise marking and cuts. It is also favoured amongst many chefs due to its simple strength as a utility knife handy for brutish tasks where a kitchen knife may be at risk of damage. 

This knife is made in the traditional japanese fashion, forge welding iron to a piece of high carbon tool steel (1084) and then forging to shape. A hollow is hammered into the tool steel bottom of the blade in order to make sharpening easier and to account for material movement while being quenched. Forge welding tool steel to iron allows for greater toughness in this blade, as the hardened tool steel is more brittle than the iron which is comparatively malleable. The bonding of these materials utilizes the desired properties of each. 

 

These tools are differentially heat treated for added toughness. 

 

This blade comes with a snugly fit black leather sheath that has been saddle stitched (with blue thread) for durability.
